Seeing as most people (myself included) were taught only to cook with the florets on a crown of broccoli… DID YOU KNOW that those bodacious broccoli stems are fabulous?! Well, I’m here to tell ya’ll that broccoli stems are the best thing since avocado toast. First peel the stems, then slice and simply toss with olive oil + flaky sea salt, or simmer them until tender and make a batch of Broccoli Stem Hummus. It may sound weird, but I promise this recipe is so gosh darn good. And the best part? No more perfectly good broccoli stems in the trash bin.
Broccoli Stem Hummus

ingredients
2 hefty cups peeled and roughly chopped broccoli stems
1-2 garlic cloves
1⁄4 cup tahini
Juice of 1 lemon
3 tablespoons olive oil
1⁄2 cup chopped fresh herbs (such as basil, chives, dill)
1⁄2 teaspoon kosher salt
instructions
- Bring a pot of salted water to boil. Add your broccoli stems and boil for 5 minutes, or until tender. Drain the vegetables and plunge them into an ice bath.
- Drain the stems again and place them in a food processor along with the garlic, tahini, lemon juice, olive oil, chopped herbs, and salt.
- Process the mixture until smooth, stopping to scrape down the sides if needed. Taste and adjust seasoning as needed. Enjoy!
