Herby Spring Coleslaw
INGREDIENTS
6-8 carrots, grated (or 1lb bag pre-shredded carrots)
1/2 head red or green cabbage, finely shredded/sliced
2 kohlrabi, de-stemmed, peeled, and shredded
1 bunch scallions, light green and green parts sliced into thin rounds
1/4 cup finely chopped dill
1/4 cup finely chopped parsley
1/2 cup plain greek yogurt
1/4 cup mayonnaise
1/4 cup tablespoons apple cider vinegar
2 tablespoons olive oil
2 tablespoons honey
Salt & pepper, to taste
INSTRUCTIONS
Combine the shredded carrots, kohlrabi, cabbage, scallions, and chopped herbs in a large bowl.
In a smaller bowl, whisk together the yogurt, mayonnaise, apple cider vinegar, olive oil, honey, salt and pepper. Taste and adjust seasoning to your liking.
Pour the dressing over the slaw, and mix until fully coated. Best enjoyed after being chilled for a few hours before serving, to allow all the flavors to meld.
